Description:

Extra Virgin Olive Oil

The Pornanino Extra-Virgin Olive Oil is a 100% guaranteed, top quality, pure unblended natural product, from untreated olive trees. It is thus free of chemical fertilizers and preservatives

The olives are picked from four different types of olive trees such as Frantoio, Pendolino, Moraiolo and Leccino, which give the Pornanino Extra-Virgin Olive oil its distinct, unique flavour.

The olive groves are located at an altitude of 400 meters above sea level, to ensure healthy, tasty olives.

After picking, the olives are cold pressed in a traditional stone mill in order to preserve the olives’ perfect taste.

Each single process, from taking care of the olive groves to hand picking, to cold pressing is supervised by the Lombardi family, in their oil mill or “frantoio” where the bottling also takes place.

Balsamic vinegar

Our balsamic vinegar is a “Traditional Balsamic Vinegar” the granddaddy of balsamic vinegars. To this day it is only made in Modena, Italy, using traditional methods, and production is overseen from beginning to end by a special certification agency.

It begins with organically grown grapes of Trebbiano, Sauvignon and Lambrusco varieties. cooked over a direct flame until concentrated by roughly half, then left to ferment naturally for up to three weeks. and then matured and further concentrated for a minimum of 12 years in a “batteria”, a group of successively smaller aging barrels.

These barrels are made of different types of wood such as oak, chestnut, cherry, juniper, and mulberry, so that the vinegar can take on the complex flavours of the casks. Directly selected by the Lombardi family our Balsamic Vinegar is produced by one of the finest makers in Modena and bottled under our supervision in Pornanino.
